  • 200 g unsalted butter
  • 100 g caster sugar
  • 1 tsp vanilla extract
  • 85 g custard powder
  • 225 g plain flour


  • 115 g unsalted butter
  • 30 g custard powder
  • 150 g icing sugar
  • 1 1/2 tbsp semi skimmed milk
  • 2 tsp vanilla extract


  1. Turn the oven on and preheat it to 180?C/fan 160?C/Gas 4. With greaseproof paper line 2 large baking trays. Mix together butter, sugar, vanilla and custard powder. Add the flour and mix into a big ball.
  2. Divide the dough into 4. Between 2 sheets of greaseproof paper roll out 1 piece. Remove the paper and cut into rectangles (about 7cm x 5cm). Do the same with the remaining dough. Dip a skewer in flour and use it to make holes.
  3. Bake for 10min then leave to cool. Mix together all the ingredients for filling, spread onto half of the biscuits and top with the other half.
