Fantastic fish pie

  • About 230g smoked haddock
  • About 600g salmon or white fish or a mixture of two
  • 400 ml semi skimmed milk
  • Large handful chopped fresh dill or parsley
  • 850 g potatoes

For the sauce

  • 40 g unsalted butter
  • 40 g plain flour
  • 1 small glass white wine approx 75ml
  • 160 g approx prawns
  • Large handful chopped fresh dill or parsley
  • 150 g approx frozen peas (optional)


  1. Preheat the oven to 180°C/fan 170°C/Gas 4. In a pan put the fish, add herbs and milk and then cover and let it simmer for 5min. Take the heat of and leave to stand.
  2. Peel and cut the potatoes into chunks. Put them in the pan with boiling water and cook until tender. Drain them, put them back in the pan and place over low heat for a couple of minutes, then mesh.
  3. Melt the butter in a small saucepan add flour and cook for a minute or two. Slowly add wine and the milk (from the fish) and stir constantly. Simmer until you have a smooth sauce. If you want to add peas and dill.
  4. Into a pie dish spoon the sauce, then add the prawns and the fish. Try to keep the fish in big peaces so it doesn't break apart to much. Put the mash potatoes on top and bake for 40min or until the topping is golden.
