What is gluten?

Gluten is made up of two proteins that are found in grains; glutenin and gliadin. These proteins, when mixed with water, form a sticky network that gives dough its glue like consistency. Hence the name, gluten. This glue like texture is what allows us to enjoy a chewy loaf of bread. This also allows the dough to rise.

Why is gluten bad for us?

Gluten can cause digestive discomfort. Aside from the discomfort, such as;

  • Tiredness,
  • Stomach pain,
  • Bloating, and,
  • Diarrhea.

Gluten intolerance can also be a sign of something more serious like coeliac disease.

There is so much information out there about gluten and the adverse effects, but as always, we recommend checking with your GP and consulting a professional as coeliac disease can be quite serious for your children (and adults, too).
